Early Chinese immigrants found themselves shut out of employment by language barriers and discrimination despite their skills or education. Some turned to work in the growing number of Chinese restaurants. Unlike cooks, waiters had greater contact with people outside the Chinese community, although these encounters were often negatively shaped by stereotypical ideas about Chinese immigrants held by many Americans.
