American society was largely an unknown for many cooks and dishwashers who never left Chinatown and remained culturally isolated and unchanged. Within the small world of Chinese restaurants, there was social mobility and some workers were inspired to build their skills in the hope of becoming a chef or eventually the owner of a restaurant.
